Doris Cafe 

My grandmother was the chef- owner of Doris Cafe in Mound City, IL. The cafe was known for its infamous barbecue and scrumptious Creole soul food. She mentioned this in the Sun- Times newspaper, "You know what kept us in business? Barbecue. That man sitting right there can barbecue. And he'd have people from miles and miles with their nose, following it to come and find out where that barbecue was." - Davis, Robert. "Black History Month- From the Archives." Moved to Joliet, IL

My grandparents journeyed to the small town of Joliet, Illinois, where they had called home for over two decades.

My training began 

My grandmother was my first instructor. She imparted the timeless fundamentals of cooking with straightforwardness and wisdom. Her specialty was Creole Soul-food, a vibrant tapestry of flavors and traditions that came together on the plate. Each dish she created was a celebration of rich spices, fragrant herbs, and heartwarming ingredients, reflecting the soulful essence of her heritage. 

About Me.

Background  
I am the founder of Ma’Nue’s LLC, established in Las Vegas, Nevada, in 2020. I possess extensive experience as a professional chef, having dedicated over a decade to various culinary environments. My expertise encompasses catering events, managing kitchen operations, and providing private chef services to discerning clientele. I graduated from culinary arts school in 2013, where I acquired foundational knowledge of food culture and a diverse array of cooking techniques that have guided my career in the food flavoring industry.

 

Career
Throughout my professional journey, I have honed my skills in menu development, ingredient selection, and food presentation. I consistently create exceptional dishes that accommodate a wide range of tastes and dietary preferences. My comprehensive experience includes crafting intricate fine dining experiences as well as preparing hearty meals for informal gatherings, thereby demonstrating both versatility and a profound passion for the culinary arts.
